Chef Alvaro’s upbringing in Cuzco, with its rich culinary heritage and diverse flavors, laid the foundation for his love affair with food, where Italy became the backdrop for his culinary education, offering him an opportunity to explore a different culinary world.

Over the years, he has travelled through different countries such as France, Brasil and Tanzania where he has mastered his culinary skills. He specializes in infusing traditional recipes with a modern twist, creating dishes that are both nostalgic and cutting-edge.
